whykale_small2There is a food scoring system called ANDI (Aggregate Nutrient Density Index) and Kale along with Collard Greens, Mustard Greens and Watercress are at the top of the charts scoring 1000 points.
Dark leafy greens reduce inflammation and are full of antioxidants such as Vitamin A, Selenium. Also Kale is full of fiber which helps to regulate bowel movements and is full of Iron.
A good rule is to incorporate some type of leafy green into your diet daily. You can do that with a salad, a smoothie, or in your eggs in the morning. Keep coming back to my blog and I will give you great recipe ideas to make incorporating greens into your diet daily easy!
